Pacheco Custom Meats is built on generations of tradition, craftsmanship, and resilience. Our story begins with our grandfather, Martin Pacheco, a skilled butcher—or carnicero—who carried on a
trade rooted in the European Middle Ages. Butchering was more than a livelihood; it was a badge of honor in northern New Mexico, passed down through families like ours. Our ancestors settled on land now known as
Pacheco Street, granted to the Rodriguez family in 1740, and began building a legacy of hard work and self-reliance. After the untimely death of Jose de la Cruz Pacheco, our family leaned on its roots in ranching and meat cutting, with 14 grandsons—including Martin—continuing the trade well into the 20th century. Today, Pacheco Custom Meats
honors this proud heritage by delivering high-quality, locally sourced beef with the same care and dedication that has defined our family for generations.

Our grandparents roots in Taos, NM

Angelica and Manuel Pacheco were pillars of both education and community in Taos, New Mexico. They met as students at Highlands College in Las Vegas, NM, and after marrying, made their home in Taos Angelica’s hometown. Angelica dedicated her career to teaching grades 3 through 8 at Taos Day School, where she was known not just for her teaching, but for organizing beloved Christmas plays and mentoring the school’s basketball team. Manuel spent decades shaping young lives as a coach of basketball, football, and track in Taos until 1973, when he moved into school administration, serving into the mid-1980s. In the 1990s, he continued his public service as a county commissioner and remained active in local government until his passing in 2014. After retiring from education, Manuel returned to his ranching roots, raising cattle and continuing the family’s deep connection to the land and community. Their legacy of service, leadership, and hard work lives on in everything we do at Pacheco Custom Meats.


Pacheco Custom Meats represents a continuation of the rich tradition of Traditional Ranching in Northern New Mexico. Our roots trace back to the 1800s when our great grandfather owned a butcher shop in Santa Fe, NM. In 1952, we relocated to Taos, NM, where we have been actively managing cattle in the Taos valley ever since. Emphasizing regenerative agriculture, our ranch strives to enhance soil and water conditions in Northern NM. Ensuring food security for our community remains a primary
objective for us.
